I am generally uninterested in the so-called “sheet pan dinner” thing. It feels like the Hail Mary of cooking: throw a bunch of random ingredients from the pantry onto a sheet pan with some chicken and pray for a miracle. But this recipe requires no prayers or miracles. It comes together in a flash and tastes amazing.
For most of my Insta feed, cold October nights signal the start of #PSL season. For me, it is the beginning of carb eating season. And this season, I am going all in on this Spicy Sausage and Butternut Squash Pasta with Ricotta and Fried Sage. Mostly because it is delicious, but also because it is ridiculously easy and highly riff-able.
I know you’re not supposed to pick a favorite child, but if I had to pit my weeknight noods against each other, this would win as my fave. It is insanely easy (especially if you are using instant udon noodles) and so quick to whip up on a hectic weeknight.
